Wood-grilled eggplant, couscous salad and vegetarian demi-glace (V)

7 days brined short ribs finished on the wood grill with sweet potato, turnips and jalapeño salsa

Pork cheek steak, lentil pottage, chorizo oil and salmon roe

Hazelnut praline flan, donuts and dulce de leche.
